Quick flaky pastry

Make in a Large bowl

350g plain flour

Pinch of salt

Sift into the bowl

200g butter, chilled in the freezer for 30 mins

Hold the butter with a cloth and grate into the flour, mix with a knife as you grate to keep the butter covered in the flour.

6 tbsp chilled water (more if required)

Sprinkle with water and continue mixing, adding just enough water, to enable the dough to form a ball. Wrap in clingfilm and refrigerate for 30 mins before using.
