Mushroom pilau rice

Cook in a saucepan

2 tbsp vegetable oil

Heat the oil

2 shallots, finely chopped

1 garlic clove, crushed

3 green cardamon pods

Stir fry until the shallots soften 3 or 4 minutes

2 tbsp ghee or butter

Stir in the ghee or butter to melt

175g mushrooms, sliced

Add the mushrooms and stir fry for 2 or 3 minutes

225g basmati rice, washed and drained

1 tsp fresh ginger, grated

1 pinch garam masala

Add the rice and spices, stir fry for 2 or 3 minutes

450 ml boiling water

pinch of salt

Bring the water back to the boil, put the lid on the pan, then simmer on the lowest heat for 10 minutes. Turn off the heat and wait another 10 minutes.

1 tbsp coriander, chopped

Fork in the coriander and serve
