Prawn rice

Pre-cook the rice

2 tbsp vegetable oil

Heat the oil in a saucepan

225g basmati rice, washed and drained

Stir fry for 2 minutes to coat the rice

450 ml boiling water

Bring the water back to the boil, put the lid on the pan, then simmer on the lowest heat for 10 minutes. Stir briefly then set aside to cool.
Finish in a large frying pan with lid

2 tbsp light olive oil

Heat the oil

1 medium onion, chopped fine

Stir fry for 5 minutes

2 sticks celery, chopped fine

1 green pepper, chopped fine

Stir fry for 10 to 20 minutes until the celery is tender

1 tsp chilli powder, or to taste

Turn the heat down, stir in the chilli powder, taste and cook for a few more minutes

250g cooked prawns, cleaned

Stir in the prawns to heat through

Above cooked rice, cooled

Stir in the rice, cover the pan and continue cooking until all the ingredients are heated through
