Prawn rice |
Pre-cook the rice | |
2 tbsp vegetable oil |
Heat the oil in a saucepan |
225g basmati rice, washed and drained |
Stir fry for 2 minutes to coat the rice |
450 ml boiling water |
Bring the water back to the boil, put the lid on the pan, then simmer on the lowest heat for 10 minutes. Stir briefly then set aside to cool. |
Finish in a large frying pan with lid | |
2 tbsp light olive oil |
Heat the oil |
1 medium onion, chopped fine |
Stir fry for 5 minutes |
2 sticks celery, chopped fine 1 green pepper, chopped fine |
Stir fry for 10 to 20 minutes until the celery is tender |
1 tsp chilli powder, or to taste |
Turn the heat down, stir in the chilli powder, taste and cook for a few more minutes |
250g cooked prawns, cleaned |
Stir in the prawns to heat through |
Above cooked rice, cooled |
Stir in the rice, cover the pan and continue cooking until all the ingredients are heated through |
