Cauliflower and broccoli dal

Pre-cook the lentils

100g lentils,washed

425ml cold water

1 red chilli, halved and de-seeded

Bring to the boil, skim off the froth, then cover and simmer for 30 minutes.
Pre-cook the vegetables

90g broccoli

90g cauliflower

Cook until just tender then plunge into cold water, drain and set-aside.
Fry the onions and spices

1 tbsp butter

Gently heat the butter in a frying pan

1 small onion, sliced fine

1 clove garlic, crushed

20g fresh ginger, grated

1 tsp cumin powder

1 tsp garam masala

Fry gently until the onion is softened then combine with the cooked lentils and vegetables and serve.
