Bombay potatoes |
Pre-cook the potatoes | |
5 medium potatoes, peeled and quartered Water to cover the potatoes ½ tsp turmeric powder pinch of salt |
Bring the potatoes to the boil, cover, and simmer until tender. Drain and set aside. |
Finish in a large saucepan | |
4 tbsp vegetable oil |
Heat the oil |
2 tsp garam masala 1 tsp turmeric ½ to 2 tsp chilli powder ½ tsp mango powder |
Stir-fry the spices for 30 seconds |
120 ml curry gravy |
Add the curry gravy, stir-fry for 2 minutes |
2 tomatoes roughly chopped |
Add the tomatoes and simmer for 5 mins |
Above cooked potatoes |
Add and simmer until hot |
