Bombay potatoes

Pre-cook the potatoes

5 medium potatoes, peeled and quartered

Water to cover the potatoes

½ tsp turmeric powder

pinch of salt

Bring the potatoes to the boil, cover, and simmer until tender. Drain and set aside.
Finish in a large saucepan

4 tbsp vegetable oil

Heat the oil

2 tsp garam masala

1 tsp turmeric

½ to 2 tsp chilli powder

½ tsp mango powder

Stir-fry the spices for 30 seconds

120 ml curry gravy

Add the curry gravy, stir-fry for 2 minutes

2 tomatoes roughly chopped

Add the tomatoes and simmer for 5 mins

Above cooked potatoes

Add and simmer until hot
