Tomato sauce

Cook in a large saucepan

2 tbsp olive oil

Heat the oil

1 small onion, chopped small

1 celery stick, chopped small

1 carrot, grated or chopped small

Cook gently for at least 10 minutes, to soften without browning.

900g very ripe tomatoes, skinned and chopped. ( Dip in boiling water to skin)

1 tsp salt

1 tsp caster sugar

Simmer gently until the tomatoes collapse and the sauce thickens. Crush the tomatoes in the pan with a potato masher to get a smoother sauce.

1 heaped tsp dried oregano (optional)

Add to taste if using sauce as a pizza base
