Tomato sauce |
Cook in a large saucepan | |
2 tbsp olive oil |
Heat the oil |
1 small onion, chopped small 1 celery stick, chopped small 1 carrot, grated or chopped small |
Cook gently for at least 10 minutes, to soften without browning. |
900g very ripe tomatoes, skinned and chopped. ( Dip in boiling water to skin) 1 tsp salt 1 tsp caster sugar |
Simmer gently until the tomatoes collapse and the sauce thickens. Crush the tomatoes in the pan with a potato masher to get a smoother sauce. |
1 heaped tsp dried oregano (optional) |
Add to taste if using sauce as a pizza base |
